The kitchen is a subtle blend of Mexican, Asian and Mediterranean elements, which Emilio Innobar’s chef Emilio Castrejón calls ‘Fine Fusion’.

Emilio has traveled the world and is influenced by his travels. He has worked in the US, Germany and 12 years in Japan, where he learned to cut fish for sashimi and tataki as a native. Before he opened his own restaurant, he was chef and co-owner of the very popular restaurant Bar & Co in Portixol. Together with some of the very first people he employs and a number of very young and talented chefs, he has now made the next step in what he calls ‘Fine Fusion’. Inspiration is derived from the fresh products that are available on the market every day. Every dish will amaze you with its phenomenal taste. Do not miss the Tataki of Dorade and the Ceviche, or ask Emilio to prepare a selection of his choice, you won’t be disappointed.
